Freezer Meal Recipe #1: Shepherd’s Inn Breakfast Pie

Well, it is pretty safe to say that Canadians generally wait in hopeful expectation to see the beginning stages of the great Canadian winter.You know, the first snowfall, fun and cozy, long underwear, snuggly winter pajamas, toe- wiggly, warm slippers, chestnuts roasting by an open fire, and so on. This excitement quickly moves to a hibernation stage, as we not-so-eagerly look outside to see the snow piles heaped so high, that we have to dig ourselves out of our driveway in the frost-biting, bone-chilling cold days ahead. So, let’s just resolve to make some good old-fashioned comfort food, shall we? Whether it’s shepherd’s pie, soul-warming soup, or mouth-watering and cheesy quiche, that makes you feel warm and fuzzy on the inside, we’ve got a freezer meal recipe that will help you to find refuge from harsh weather and biting cold in the comfort of your kitchen.

A couple of years ago,  I searched for a  brunch recipe that would feed a large family on a frosty, Christmas morning. I found this recipe (used by a couple who run a Bed-and-Breakfast), and my family now looks forward to this comfort food every Christmas, Easter, and some of those frosty, weekend mornings in between.

Ingredients:

1-1/2 pounds bulk pork sausage
1 cup (4 oz) shredded cheddar cheese
1/2 cup milk
1/8 teaspoon pepper
Minced chives
4 cups frozen Tater Tots
4 eggs
1 Tablespoon minced green onions
Dash garlic powder
2 tomatoes, sliced and quartered

 

In a skillet, cook the sausage over medium heat until no longer pink; drain. Spread in an ungreased 11"x7"x2" baking dish. Top with Tater Tots, sprinkle with cheese. In a mixing bowl, beat the eggs, milk, onion, pepper and garlic powder just until blended. Pour over cheese. Cover and bake at 350° for 30 minutes. Uncover; bake 2-25 minutes longer. Sprinkle with chives. Garnish with tomato. Yield: 6 servings.

Put into a freezer container and pop into the freezer for family gatherings or brunches ahead! Enjoy!
